Cornbread
1 c. yellow cornmeal
1 c. white flour
2 to 4 tsp. sugar (optional)
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 egg
1/4 c. vegetable oil
Pre-heat oven to 425*F, in large bowl combine cornmeal, flour, sugar, baking powder and salt. Add milk, egg and oil, beat until smooth. Spray 8 in. baking pan or grease it, pour batter into pan, bake 20 to 30 mins. or till toothpick comes out clean. Best served hot with butter.
