Gravy

While turkey rests, prepare gravy.

2 c, pan juices or broth

4 T. butter

4 T. flour

1/2 t. dried thyme

Melt butter in saucepan over med. heat. whisk flour and continue till it browns.  Slowly pour in broth and continue whisking till it thickens.  Season with thyme, salt & pepper and serve with turkey and dressing/stuffing.

Slow Cooker Pot Roast

1 med. chuck roast

2 ribs celery cut up

3 carrots cut up

1/2 green bell pepper cut up

1 med. onion cut up
3 med. potatoes cut in quarters

1 c. water

salt, pepper, oregano, basil, garlic powder for seasoning

Place all ingredients in slow cooker except potatoes.  Set temp. on high and cook for three hours.  Put in potatoes and cook another hour.  Remover to serving dish, reserve stock for making gravy.

Easy Coconut Cake

I love something easy to make especially when I need it fast before guests arrive.  This one is very easy and it’s light, with lots of flavor, along with being cool.  I’m sure you’ll enjoy it on these hot summer days, we’ve been having.

1 round angel food cake
1(8oz)tub whip topping
1/4 c. Coco Real cram of coconut
1 1/2 c flaked coconut
3 lg. box fresh strawberries
juice of 1 lemon
1 1/2 packets of sweetner
optional: fresh flowers for garnish

Take a serrated knife, cut cake into 3 layers. Mix whip topping with Coco Real. Put bottom layer of cake on cake plate or serving dish, spread layer with whip topping, sprinkle with coconut, put middle layer on top and repeat. Add last layer, use remaining topping, ice cake & coat sides and top with coconut. Refrigerate till ready to serve.

Clean berries, cut into slices, pour lemon juice over and sprinkle with sweetner, then toss. Decorate cake when ready to serve.

Serve cake and berries for a fresh dessert.

Recently I asked  a few of my friends, to send me some of their southern recipes, to submit, since I’m running low and to be honest it’s the lazy streak, that gets in the way of my taking the time to set up recipes.  So, I got a few, but I’m still waiting on my friends, for more……….I’m sure they got busy as I have……our lifestyles, keep us going these days, and it’s hard to stay on one subject, like recipes. :)
